Romaine Hearts
Healthful hearts

Romaine hearts, the tender inner lettuce leaves, are an excellent source of vitamin A and beta-carotene, which promote healthy eyes and skin and have antioxidant qualities; vitamin K, which contributes to bone health and may benefit Alzheimer's patients; and folate, which helps to prevent birth defects. Romaine hearts are low in fat and calories, saturated fat-, sodium- and cholesterol-free and a good source of dietary fiber and other vitamins and minerals.

Heart of the matter
Crisp, fresh romaine hearts add a sweet taste and health benefits to salads, sandwiches and wraps. Wash and dry thoroughly on paper towels before storing in a plastic bag in the refrigerator crisper for up to one week. To add extra crispness, plunge romaine leaves in ice water for a few minutes just before serving.
