Bok Choy
Bok choy is a type of Chinese cabbage known for its mild flavor that serves as the perfect complement to other foods in dishes like stir-fries. The dark green leaves keep their sweet flavor and crisp texture even after cooking, but you can also eat both the white stalks and leaves raw.
Bok choy is often referred to as the “soup spoon” because of the shape of its leaves.
Handling Tips
Select firm stalks and crisp, green leaves when shopping for bok choy. Bok choy will last in your vegetable crisper for up to a week, and will stay fresher if you don’t wash it until you’re ready to use it. If the bok choy wilts, apply ice directly to bunches or quickly plunge into cold water and drain.
