Dill (Aneth)
Fresh dill leaves are often used as herbs in Europe and central Asia. Dill is best used fresh as it loses its flavor rapidly if dried, however, freeze-dried dill leaves retain their flavor for months. Its green leaves are wispy and fernlike and have a soft, sweet taste.
During the Middle Ages, people used dill to defend against witchcraft and enchantments.
