Lacinato Kale
Lacinato kale is also known as Dinosaur kale, Tuscan kale or “cavolo nero,” which means black kale. This rich cooking green has had a place in Italian and Tuscan kitchens for years. It boasts the same nutritional benefits as its traditional green kale cousin while featuring heartier dark blue-green leaves.
Lacinato kale is actually improved with a little bit of frost—cold temps can maximize sweet flavor in its leaves.
Handling Tips
Lacinato kale leaves have an especially bumpy texture compared to original green kale. Avoid yellowing leaves or slimy stems when selecting your kale. Once home, store your kale in the fridge for up to four days if wrapped loosely in plastic. Before cooking, rinse with cool water and trim the stem ends.
