Red Beets
Beets contain high levels of antioxidant and anti-inflammatory agents that may help reduce the risk of some cancers. Also, high levels of unique fiber found in beets may be linked to a lower risk of colon cancer.
They get their striking red color from betacyanin, a plant pigment that some preliminary research indicates might help defend cells against harmful carcinogens.
Handling Tips
Fresh beets with greens attached can be stored for three to five days in the refrigerator. Beets with the greens removed can be stored in the refrigerator for two to four weeks. If you will be storing beets longer than a couple of days, cut off the majority of the greens and their stem, so they don’t pull moisture away from the root.
