Freeze Your Greens

This is one of the simplest ways to preserve your greens for Winter! Freezing your greens will allow you to buy in bulk (and save money!) without the heartache of throwing out good produce.

Some of your favorite Foxy Fresh Produce items are perfect for freezing, especially our leafy greens. Try freezing Foxy Organic Spinach, Kale, Cilantro, Parsley and Swiss chard. Make sure you choose greens that are crisp and fresh. Select young, tender green leaves.

According to the National Center for Home Food Preservation, “blanching (scalding vegetables in boiling water or steam for a short time) is a must for almost all vegetables to be frozen. It stops enzyme actions which cause loss of flavor, color and texture.” This is the first important step when freezing your greens!

1. Blanch It

Use one gallon of water per pound of vegetables. Bring water to a boil and lower vegetables into water using a wire basket. Water should return to a boil within one minute. Blanch times will vary from 2-7 minutes depending on the vegetable.

2. Cool It

Quickly transfer vegetables into an ice bath to stop the cooking process.

3. Bag It

Place 1-2 cup servings in individual freezer bags or store in bulk.

4. Cube It

Chop your greens. You can puree your greens separately in a food processor or blender, or puree them together. Make sure to blend with a little bit of water to create a smoothie consistency. Start small and add more if needed! Once the cubes are frozen, you can either leave them in the trays or place them in individual freezer bags.

Frozen greens are perfect for smoothies and stir-frys – you can do all the prep work ahead of time so they’re practically made for you after these simple steps! You can also add to dips, baked goods, sauces and soups.
