Sweet and Sour Broccoli with Chicken
Serves: 4
Ingredients
- 2 tablespoon sesame oil
- ΒΌ cup honey
- 1 tablespoon sriracha
- 1 tablespoons apple cider vinegar
- 1 tablespoon reduced sodium soy sauce
- 2 chicken breasts, cubed
- Salt and pepper
- 1 tablespoon coconut oil
- 3 garlic cloves, minced
- 1 tablespoon ginger, minced
- 2 heads of Foxy broccoli, cut into florets
- 1 cup of shredded or julienned carrots
- Green onions for garnish
- Sesame seeds for garnish
Preparation
- Whisk together sesame oil, honey, sriracha, vinegar and soy sauce. Set aside.
- Season chicken with salt and pepper.
- Heat coconut oil in a large wok or skillet over medium heat. Add ginger and garlic and cook for 1 minute. Add chicken to skillet and cook until no longer pink, about 5-7 minutes.
- To the same wok, add broccoli and carrots. Cook for 2-3 minutes until soft.
- Pour sauce over chicken and broccoli mixture. Cook for another 2-3 minutes.
- Transfer to a large serving and garnish with green onions and sesame seeds.
