Broccoli Cheddar Quinoa Bites
Ingredients
- 1 1/2 cups chopped cooked Foxy Broccoli
- 1 1/2 cups cooked quinoa
- 1 1/4 cups shredded Cheddar cheese
- 3 eggs, beaten
- 2 green onions, thinly sliced
- 1/2 cup grated Parmesan cheese
- 2 tsp finely chopped fresh thyme
- 1 1/2 tsp Dijon mustard
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp each red chili flakes and pepper
Preparation
- Preheat oven to 375˚F. In large bowl, stir together broccoli, quinoa, Cheddar, eggs, green onions, Parmesan, thyme, mustard, garlic, salt, chili flakes and pepper. Spoon evenly into 24 greased mini muffin cups.
- Bake for 15 to 18 minutes until golden brown and set. Let cool for 5 minutes; invert onto rack. Let cool completely or serve warm.
