Broccoli Potato Soup

Serves: 6


  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 crowns of Foxy or Foxy Organic broccoli, cut into florets
  • 1 small potato, chopped
  • 1 small onion, chopped
  • 4 cups low sodium vegetable or chicken broth
  • Salt and Pepper to taste


  1. In a large soup pot, heat oil.
  2. Add garlic, broccoli, potatoes and onions. Season with salt and pepper. Cook for 7-10 minutes until onions are caramelized. Add broth, cover and simmer for 15-20 minutes or until all vegetables are soft.
  3. With an immersion blender, blend until smooth and creamy. You can also use a blender to puree the soup in batches.
  4. Garnish with a drizzle of plain yogurt and croutons.
