Broccoli Potato Soup
Serves: 6
Ingredients
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 2 crowns of Foxy or Foxy Organic broccoli, cut into florets
- 1 small potato, chopped
- 1 small onion, chopped
- 4 cups low sodium vegetable or chicken broth
- Salt and Pepper to taste
Preparation
- In a large soup pot, heat oil.
- Add garlic, broccoli, potatoes and onions. Season with salt and pepper. Cook for 7-10 minutes until onions are caramelized. Add broth, cover and simmer for 15-20 minutes or until all vegetables are soft.
- With an immersion blender, blend until smooth and creamy. You can also use a blender to puree the soup in batches.
- Garnish with a drizzle of plain yogurt and croutons.
