Egg Muffins with Broccoli and Cheese

Serves: 6


  • 10 eggs 
  • 1 cup broccoli, cut into small florets
  • 1/3 cup crumbled goat cheese 
  • Dash of salt, pepper and garlic powder


  1. Preheat oven to 350 degrees F.
  2. Beat eggs in a large bowl and add salt, pepper and garlic.
  3. Coat a non-stick muffin pan with cooking spray or line the muffin cups with cupcake liners. Using a ladle, spoon about 1/3 cup of egg mixture into each muffin cup (the muffin cups should not be filled more than half way). 
  4. Add about 3-4 broccoli florets and spoonful of crumbled goat cheese into each muffin cup.
  5. Place in oven and bake for 15-20 minutes or until knife inserted near the center comes out clean.
