Egg Muffins with Broccoli and Cheese
Serves: 6
Ingredients
- 10 eggs
- 1 cup broccoli, cut into small florets
- 1/3 cup crumbled goat cheese
- Dash of salt, pepper and garlic powder
Preparation
- Preheat oven to 350 degrees F.
- Beat eggs in a large bowl and add salt, pepper and garlic.
- Coat a non-stick muffin pan with cooking spray or line the muffin cups with cupcake liners. Using a ladle, spoon about 1/3 cup of egg mixture into each muffin cup (the muffin cups should not be filled more than half way).
- Add about 3-4 broccoli florets and spoonful of crumbled goat cheese into each muffin cup.
- Place in oven and bake for 15-20 minutes or until knife inserted near the center comes out clean.
