Warm BroccoLeaf™ Salad with Pear, Figs and Hazelnuts

Serves: 4


Balsamic Dressing:

  • 1/4 cup extra-virgin olive oil

  • 1 1/2 tbsp balsamic vinegar

  • 1 tsp honey

  • 1/4 tsp each salt and pepper

BroccoLeaf™ Salad:

  • 1 tbsp olive oil

  • 1 pkg (12 oz) Foxy BroccoLeaf™

  • 2 pears, cored and chopped

  • 1/4 cup chopped shallots

  • 4 fresh figs, quartered

  • 1/3 cup chopped toasted hazelnuts

  • Shaved Parmesan cheese


1. Balsamic Dressing: Whisk together olive oil, balsamic vinegar, honey, salt and pepper. Set aside.

2. BroccoLeaf™ Salad: Heat olive oil in large skillet set over medium heat; sauté BroccoLeaf™, pears and shallots for about 5 minutes or until BroccoLeaf™ starts to wilt. Add dressing; toss to coat.

3. Divide salad evenly among plates. Top with figs, hazelnuts and Parmesan cheese.

Tip: Strips of prosciutto can also be sautéed with BroccoLeaf™, pears and shallots if desired.
